I am not gonna spend a lot on souvenirs or stuff like that. I am just gonna spend money transportation and admission to well known attractions as well as food. I plan on staying in hostels instead of hotels if I can. I would also only want to eat out like once a day and get groceries the rest of the time The trip is 2 weeks and I want am comfortable spending 2500 Canadian Dollars (which includes the cost of flights to and within Europe and back to Toronto. Is this trip doable on this budget?
If you are only spending 14 days in Europe you will not have enough time to spend in all those places. To travel between countries you must allow a full day. As you are on a tight budget I cannot see you having the money for fast trains eg between Barcelona and Madrid, so you will need to take regional trains which will take forever. I suggest you drop Spain and just concentrate on the other cities. That way you will have a better chance to see each city and will have time to enjoy the trip.
EDIT: Just realised that the $2500 also includes your flights. This is nowhere near enough money to cover the cost of hostels, food, transport, and sightseeing. You will be going to Europe at the beginning of high season when hostel/hotel charges increase. It is also probably too late to get a reasonably priced flight. Have a look at Hostel World to get an idea of accommodation prices. You will also need to get travel insurance.
You also need to know that a condition of entry to the Schengen Zone (that's most of Europe) is that you can prove you have enough money to support yourself.

That's madness. You'll be spending most of your time as well as money on getting from place to place. Only one day in Copenhagen hardly seems worth it - it's a beautiful city and well worth spending several days there. Do you not realise the distances involved?
You only have two weeks. I would suggest TWO destinations, and you'll have a much nicer time.
more like 5,000. the flight to copenhagen from toronto in may is 1,200. food for all those day can easily add up to 500 and then adding transport from all the locations can be another 1000. and that is not adding the cost of hotels yet. good luck sounds like a fun trip hope you can make it
Not really. You will spend most of your budget on transportation. You probably won't even have enough. Your roundtrip flight from Toronto is going to be about half that, depending on which city you fly in to.
Why aren't you using trains??
