Start by learning how to categorize.
You could get some tourist guidebooks and plan what you and your family would like to see.
Seven weeks will also give you time to learn a little Spanish, just the basics but enough to be polite when you're shopping or need to ask for something. There are plenty of free language websites where you can learn tourist level Spanish.
Then you can work out what you will pack. It's important to pack light, so look at clothes that will wash and dry easily. Depending on where in Spain you're going, it could be getting cooler, so pack at least one set of cold weather clothes, a rain jacket and umbrella.
Get your brain into gear for a start off, have you never been on holiday before, have you never been to Spain before, ???? can't really understand why you are asking such a question?
