Actually, it all started in the South, in Andalucía. That's where all the bulls are raised. That's where the matadors are trained. That's where to go. Sevilla has one of the most famous bullrings in the country, and is one of the best places to see a bullfight.
Málaga has one of the oldest and most historic bullrings, and Ronda (a small, charming, quintessentially Andaluz city, absolutely marvelous - if you have time) has one of the most famous.
The bullring in Madrid has a really interesting fa?ade, but if memory serves, is relatively new. I don't think it is necessarily the best place to see a bullfight.
Get a sol seat if you are on a budget. Bullfights are in the summer, starting in May, running through October, and are generally held on Sundays and feast days.
