You may wish to give some thought to getting married in the UK, but having your blessing & Ceremony in the Canaries as this will be much easier.

You should get official information in the town/city mayor's office in which you want to marry.
But I think that you must be resident to get a civil marriage in Spain, though.
They will also ask for papers like birth certificate, municipal registration of residence, etc.
