As an UK citizen you wont need any visa. If you are lucky to find a job that is another question.

UK citizens do not need visas under EU legislation. There are very few jobs in Spain. Most jobs of the type you mention are not taxed as they are usually illegal so there is no tax or social security.
The only jobs of the kind you mention that I can think of are in boat cleaning or touting. The former is hard dirty work and if things go wrong or you hurt yourself, you will be very much on your own.
There are places you can work for your board and lodgings, but no wages. It will probably be long hours, but it is a great opportunity to learn the language.
Anything you earn in Spain must be declared on a tax return form in the UK.
