You don't get to leave at any drop of a hat and not pay.
If you leave, you need to provide proper notice. In most state's that is 30 days from the 1st-the end of the month. In California, it's 30 days. A few local laws might be less time.

Them being family does not matter. You need to see this as purely a landlord/ tenant issue. He cannot just have the court garnish your wages. It does not work that way. He has to get a court order. They cannot garnish wages unless the court agrees you owe them what they say you owe. They have to prove you broke what they say you broke. Nothing can happen until they sue you for the damages. He has to win a judgement against you for the damages before he can ever even apply to garnish wages. Yes, you would have the right to dispute the charges in court.
They won't sue you as they have no written rental agreement.

I currently live with my aunt and uncle. I give them money every month to help with bills and rent. I want to leave out on my own, they are charging me $500 for a tiny tiny room, and they are annoying as hell. Now that I want to leave they are trying to say I need to pay for a window in my room that's been not working since before i ever got there. When i lived with them before last year i moved out and in with my girlfriend i paid them for the full month and i left in the middle of the month, they just keep threatening me if i leave and trying to find all these small things to make me pay for...I am going to leave regardless but what are my options if they sue me?
