I want to create an app, with 'i' as a prefix, but I'm not sure whether or not apple have it as a trademark...

No, there are only trademark rights to trademarks that would create confusion among consumers that the products or services actually came from Apple.

There are a few other "i - word" trademarks registered and not owned by Apple. For instance, there is a TV show called iCarly. Also consider iMap, iMix...

The fact that your business relates to apps would make it unlikely you would succeed in registering your trademark with iAnything, unless you have a pile of money and a few years to waste on litigating it.

No, Apple has not cornered the market of i... words, they have trademarked quite a few though. You can find other products like the iHome brand of iPod accessories with no official connection to Apple.
